What raw food holiday menu - Thanksgiving, Christmas or any special occasion - would be complete without mashed potatoes? The raw creamy goodness of the parsnips mixes well with the cauliflower to bring you a raw rendition of the most beloved holiday classic. Serve it with raw food mushroom gravy and Sprouted Quinoa Salad. Don't forget the raw pumpkin pie!

Yield: 3 cups
Ingredients:
- 1 1/2 cups chopped cauliflower
- 1 1/2 cups chopped parsnips
- 1/4 cup cold-pressed olive oil
- 3 tablespoons nutritional yeast
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper, or to taste
- 1/2 teaspoon nama shoyu, or to taste
Preparation:
Place all of the ingredients into a food processor fitted with the S-blade and process for 30 seconds or until you reach the consistency you're happy with. Serve immediately or set aside at room temperature. If refrigerated, you may wish to warm up your mashed cauliflower and parsnips slightly in a pan over low heat before serving.
