Yield: 1 1/2 quarts
Ingredients:
- 3 cups broccoli florets
- 1 cup broccoli stems, chopped, thick skins removed
- 1 1/2 cups water
- 2 tablespoons freshly squeezed lemon juice
- 1/2 cup raw cashews
- 1/2 cup sliced celery
- 1/4 cup chopped yellow or red onion
- 1 clove garlic, optional
- 1 tablespoon fresh dill or 1 teaspoon dried dill
- 1 teaspoon fresh rosemary or 1/2 teaspoon dried rosemary
- 1 tablespoon fresh parsley or 1 teaspoon dried parsley
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- 1 tablespoon nama shoyu
- 2 tablespoons nutritional yeast
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper or cayenne, optional
- 1/2 teaspoon celery seed
Preparation:
Place all of the ingredients in a blender and blend for 30 to 40 seconds or until a creamy consistency is reached. You may wish to add a little more water. Serve immediately. If refrigerated, you may want to warm the soup to room temperature before serving. Garnish your raw cream of broccoli soup with extra fresh dill.
