This simple raw food salad recipe makes eating arugula a pleasure. Arugula is a spicy green with lots of flavor. Dressing it with sweetness as in this arugula salad recipe with a sweet agaqve and ginger salad dressing allows you to enjoy the experience a bit more. Dried fruits of all kinds taste great in arugula salads, as do the sweeter veggies like carrots and beets.

Ingredients:
- 1 bunch arugula, chopped in large pieces, about 4 cups
- 2 tablespoons cold-pressed olive oil
- 1 tablespoon raw apple cider vinegar or lemon juice
- 2 teaspoons grated ginger
- 1 to 2 tablespoons raw agave nectar, to taste
- 1/4 teaspoon sea salt (or substitute 1 teaspoon nama shoyu)
- 1/4 cup peeled and grated carrot
- 1/4 cup dried cranberries or currants
- Handful pecans, chopped
Preparation:
Place the arugula in a mixing bowl. Whisk together the olive oil, apple cider vinegar, ginger, agave nectar, and salt until well combined. Pour over the arugula and gently toss until all of the leaves are coated.
Serve this arugula salad topped with the grated carrots, cranberries, and pecans.
