Another easy raw food cookie recipe. Just blend together a few raw ingredients - including lemon, shredded coconut and raw cashews - and then stick them in the dehydrator. who knew raw cookies could be so easy, healthy and delicious? I have to admit, I had a hard time not eating the cookie batter and sneaking bites from the cookies while they were still in the dehydrator. They're just that good. So if you're like me, best to make a double batch of these little raw cookies.

Ingredients:
- 2 cups raw cashews
- juice from 2 lemons
- approx 1 1/2 cups raw shredded coconut
- 2 tbsp honey or agave nectar
Preparation:
Process cashews in blender into a fine powder.
Add lemon juice, coconut and honey until consistency is thick and moist, adding a bit of water if needed.
Dehydrate about 6 hours.
