Faster than cake mix? Forget measuring oil and cracking eggs with a cake mix- all you need to do is follow this two-minute foolproof low-fat and cholesterol-free vegan cake mix recipe! If you've got a cake mix and a bottle of soda you've got a vegan cake in the oven in just a couple minutes. as long as your cake mix is vegan of course -just read the label. Egg-free and dairy-free vegan cake just doesn't get any quicker than this.

  • one box cake mix, any flavor (Duncan Hines brand is usually vegan, otherwise read ingredients)
  • 10 oz. cola, any flavor, not diet (open a 12 oz can and take a couple sips)


In a bowl, mix together cake mix and soda. Pour into greased cake pan. Bake according to directions on the box. That's it! You won't believe how quick and how easy this cake recipe is!

Hint: For a chocolate cake, use a dark soda, like Coke or Pepsi. For a yellow cake or spice cake, use a light soda like Sprite or 7-up.

A little suggestion, Guest

Most of the people who had problems with this cake (falling in or being too crumbly) either cooked it too long or took it out too early. As to falling in.... It will only fall in if you take it out too early or it you open up the oven periodically during baking. This is especially true with chocolate cake mixes. Being too crumbly.... If you A) bake it too long or B) used a diet soda, it won't work as well. If neither of those fixes the recipe.... use a full can instead of one with a few sips. This is also a Weight Watchers recipe, which is pretty cool. Oh, and if you still have problems, try changing the type of soda you use. I find that root beer makes it more dense, and sprite makes it more airy. Dr. Pepper is somewhere in between. Sometimes the brand of soda effects it too. Hope this helps(: I love this recipe and make it all the time.
