Ingredients:
- 8 strips Smart Bacon, diced (set 2 strips aside for topping)
- 6 medium sized baking potatoes
- 1/2 stick butter or margarine
- 1 cup milk, soy milk or rice milk
- 1/2 cup cheddar cheese or soy cheese
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt and pepper to taste
Preparation:
Bake the potatoes in a preheated 350 degree, oven for 1 hour. Cut the very tops of each potato in an oval shape, and scoop out the insides to create "boats".
In a large bowl, mash the insides of the potatoes with the butter. Wisk in the milk, and whip until light and fluffy. Mix in the cheese and seasonings. Fold in Smart Bacon. Sprinkle tops with extra strips of crumbled Smart Bacon. Salt and pepper to taste.
Preheat oven to 350 degrees. Bake for 1 hour or until golden brown on top.
