  2. Preheat oven to 400 F. Wash and peel sweet potatoes, taking care to cut out brown spots and eyes. Cut potatoes lengthwise into wedges or sticks.

  3. Place cut sweet potatoes in a large bowl and drizzle with extra-virgin olive oil. Toss to combine.

  4. Combine cumin, paprika, and salt in a small bowl and mix together.

  5. Sprinkle mixture onto cut sweet potatoes. Gently toss to incorporate until potatoes are evenly coated with both oil and spices. Adjust seasoning, as necessary.

  6. Spray a baking sheet with coconut or vegetable oil spray. Alternately, use a silicone baking mat or wax paper to cover sheet.

  7. Place coated sweet potatoes onto sheet in a single layer.

  8. Bake in a preheated oven for about 30 minutes, or until done. Toss once or twice, turning pan as needed, to make sure fries bake evenly.

Tips

  • When selecting your sweet potatoes, make sure to pick potatoes that are pale in color and free of mold, green spots, wrinkled spots, or bruises.
  • Some cooks prefer to leave the sweet potato skins on for textural or other reasons. However, depending on the potato, skins may be tough to chew. It's your preference.
  • Make sure to bring your oven up to full temperature before baking the sweet potatoes fries. Placing them in prematurely will cause uneven cooking and possibly burn or ruin your side dish.
  • These are best the day they are made, but can be reheated easily in the oven if you should have any leftovers.
