Ingredients:
- 5 or 6 large sweet potatoes or yams, chopped
- water for boiling
- 1 14 ounce can coconut milk
- 2 tsp ginger
- 1/2 tsp curry
- 2 tbsp olive oil
- salt and pepper to taste
Preparation:
In a large pot, cover the yams or sweet potatoes with water and bring to a boil Allow to simmer for at least 15 minutes, or until soft.Mash the sweet potatoes to desired consistency and add remaining ingredients.
