Sun-dried Tomato and Walnut Penne Pasta
If you're a vegetarian or vegan who loves sun-dried tomatoes, you'll love this rich penne pasta recipe with sun-dried tomatoes and walnuts. The sun dried tomatoes add a decadent and gourmet flavor to this pasta dish, but the preparation and ingredients are simple and easy. Recipe courtesy of the Wheat Foods Council.

Ingredients:

  • 8 ounce penne pasta
  • 2 cloves garlic, minced
  • 1/3 cup chopped walnuts
  • 3/4 cup sun-dried tomatoes in oil, drained and chopped
  • 2 tbsp olive oil
  • 1 tsp basil
  • 1/2 block firm tofu, pressed
  • salt, to taste

Preparation:

In a large saucepan, bring 3 quarts of water to a boil. Add the penne pasta and cook according to package directions.

As the pasta cooks, prepare the sauce. Place the minced garlic in a large bowl. Add the walnuts, sun-dried tomatoes, oil and basil. Mash in the tofu and mix well with a spoon.

When the pasta is ready, drain, and add to the mixture in large bowl. Toss all ingredients until pasta is well-coated. Pour onto a platter and serve at room temperature or chilled. Servings: 4

Nutrition: One serving provides approximately: 279 calories, 13 g protein, 22 g carbohydrates, 3 g fiber, 17 g fat (2 g saturated), 19 mg cholesterol, 63 mcg folate, 3 mg iron, 135 mg sodium.

Sun-dried tomato penne pasta, Guest J<3cooker!

This was a delicious easy dish!! Although I served it warm instead of cold and found it delicious! Adding a bit of the marscapone cheese was the perfect touch!! I would deffinetely recommend this to anyone!
