Combine fresh tomatoes and basil with asiago cheese, a good quality olive oil and a bit of garlic for a healthy and simple vegetarian pasta dish. Use fresh ingredients for the best taste. Vegetarian Tomato Basil Pasta with Asiago Cheese. Recipe courtesy the Wheat Foods Council.

Ingredients:

  • 12 ounces pasta (use linguini or fettucine)
  • 2 tbsp olive oil
  • 1 tsp fresh minced garlic
  • 1 tsp salt
  • 12 ounces cherry tomatoes, sliced
  • 2 tbsp fresh basil leaves, cut into thin strips
  • 1/4 cup Asiago cheese (Parmesan may also be substituted)

Preparation:

Cook pasta according to package directions and drain.

In a small skillet, sautee garlic in olive oil. Add tomatoes and basil, stir until warmed.

In a large bowl, combine pasta with tomato mixture and cheese. Garnish with extra basil. Serve immediately.

I can't say I followed the recipe exactly, because I used sliced regular tomatoes, macaroni, and no cheese. But I still have to say, this was really good! I added some sugar to the onions and some rosemary, and omitted the basil. I loved it and will definitely be making it again. This was great for a quick pasta dish for vegetarians who don't eat meat substitutes or cheese and don't have a lot of time or vegetables on hand.
