Vegetarian Ramen Noodle Tomato Soup with Tofu. A quick, cheap, and easy ramen noodle and tomato soup with just three ingredients. If you're on a budget, this is a great vegetarian and vegan one-pot meal. Feel free to use fried tofu or a flavored variety for extra "oomph" to this ramen noodle soup.

Ingredients:

  • 1 package vegetarian ramen noodles, including spice packet
  • 1 can tomato soup (condensed)
  • 1/2 block firm or extra-firm tofu, cubed

Preparation:

Prepare vegetarian ramen noodles according to the package instructions. Reduce heat to a slow simmer and add can of tomato soup and tofu. Allow to cook for at least five minutes, stirring occasionally.
