Ingredients:
- 1/4 cup olive oil
- 2 - 3 cloves garlic, minced
- 1 red onion, sliced into strips
- 2 bell peppers, any color, sliced into thin strips
- 1 cup French cut green beans
- salt and black pepper to taste
- 1 tbsp Italian spices (use a mix of oregano, basil, marjoram and sage)
- 1 tbsp lemon juice
- 1 cup tomatoes, chopped
- 1/3 cup fresh grated Parmesan cheese
- 12 - 14 ounces corkscrew or bowtie pasta, cooked and drained
Preparation:
Sautee garlic and red onion in olive oil for a couple minutes, then add the bell peppers and beans amd sautee for another 3 -4 minutes, stirring frequently.Add the salt and pepper, Italian spices, lemon juice and tomatoes, and cook for 1 -2 more minutes, stirring to combine well.
In a large serving bowl, combine the Parmesan cheese, pasta and vegetables. Top with additional Parmesan if desired.
For a vegan version, either omit the cheese or use a vegan Parmesan cheese.
