Vegan Fettucine Alfredo Recipe

Dairy free and vegan, this fettucine alfredo is made from cashews!

An easy recipe for rich, creamy, dairy-free, cheeseless vegan alfredo sauce. Think you're dreaming? You're not! Try this incredibly easy and incredibly delicious creamy vegan alfredo sauce for a satisfying vegan fettucine alredo. Honestly, if I could give this recipe six stars, I would. It's that good.

Ingredients:

  • 1 cup cashew cream or thick cashew milk
  • 1 tbsp miso
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1/4 cup nutritional yeast
  • 1/2 small onion
  • 3/4 tsp garlic salt
  • 1 tbsp olive oil
  • dash sea salt (optional)

Preparation:

Process all ingredients together in a blender until thick and creamy on medium to high speed. Add a dash of sea salt to taste. Oil will emulsify to help thicken the sauce.

as is - this is good, to make it a little bit more authentically italian i would omit the miso and the soy sauce - add more sea salt and ground pepper and a little nutmeg. then heat in pan and toss w/ the pasta as you are heating it. also i have used this as a cheese spread with crusty bread, tomatoes and basil.
