Avocado and Pesto Pasta Recipe

California style pesto and avocado pasta

Being born and raised in California, I'm a firm believer that you can never eat too many avocados! This California-inspired pesto pasta recipe combines the light, creamy flavor of the avocado with a rich basil pesto for a unique vegetarian pasta dish. Yum! Related video: How to Make Pesto

Ingredients:

  • 1 1/2 cups pine nuts or walnuts
  • 1 bunch basil
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 cup parmesan cheese
  • 1 avocado, chopped
  • pasta

Preparation:

Process together all ingredients except the avocado and the pasta in a food processor until almost smooth, adding more liquid if needed.

Toss together with avocado and hot pasta.

This is a VERY high calorie recipe (probably why it's so delicious.) We all need good fats, though. If you're on Weight Watchers, beware the pesto sauce alone is over 2100 calories, and 66 points. Use it accordingly. The recipe does not include number of servings, so do your own math depending on how many you get. I don't know of a good substitute for pine nuts, and chopped walnuts are only slightly less calories. The majority of the fat in this recipe is the mono-saturated type (the exception is the Parmesan) that is so much better for you than saturated fats.
