Easy Vegan French Toast Recipe
This easy vegan French toast recipe uses bananas instead of eggs, giving it a sweet flavor. I like to use a thickly sliced whole grain bread, but this recipe works well with just about any kind you choose. If you're feeling a bit more adventurous, try this coconut and banana vegan French toast recipe, or try this vegan recipe for French toast with nutmeg. I also really like this vegan French toast with tahini which is sweetened with maple syrup - yum!

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Ingredients:

  • 2-3 ripe bananas
  • 3/4 cup soy milk
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (optional)
  • 1 teaspoon vanilla
  • bread, any kind is fine
  • vegan margarine

Preparation:

Blend bananas, soy milk, cinnamon, pumpkin pie spice and vanilla in blender or food processor and pour mixture into pie plate or wide dish. Gently dip bread slices into the mix, coating both sides. Fry in vegan margarine in medium-hot skillet until golden brown. Serve with maple syrup if desired, and, as always, enjoy your wonderful vegan French toast!

Excellent after some trial and error, Guest veganwannab

My first batch was extremely soggy. I do not like soggy French toast. So what I did – first, I lightly toasted my bread. Then I used a basting brush to brush the batter on the bread rather than dipping the bread in the batter. I brushed the batter on one side and did not brush the other side until I was ready to flip my toast in the skillet. Make sure you use a non-stick skillet and have your vegan butter close by to keep reapplying to your hot skillet. I found the toast cooks much betting in some hot vegan butter. The skillet temperature should be slightly past medium but not too much. You will burn the banana if your temperature is set too high. You will need to let it cook a few minutes on each side. I used almost an entire loaf of whole grain bread trying to combat the sogginess. It was well worth the effort. Lightly toasting the bread first, and brushing the batter on rather than dipping did the trick for me. This was so good! I will definitely make these often! Bananas are expensive and this recipe makes a huge batch of batter. If you are cooking for just a couple of people, try one or two bananas and cut back on the rest of the ingredients to prevent waste.
