Vegan Cereal Breakfast Bars
These cereal bars or breakfast bars are perfect to grab and eat on the go and are a great snack for kids. They remind me of the Rice Krispie squares my mom used to make when I was a kid, yet they are lower in fat and vegan. Try sprucing them up by adding some chocolate chips for a real treat, or, for a healthier breakfast bar, use a whole grain high-fiber cereal. Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients:

  • 4 cups breakfast cereal, your choice
  • 2 cups quick cooking oats
  • 2/3 cup peanut butter (or other nut butter)
  • 2/3 cup tahini
  • 1 1/2 cups maple syrup
  • 1/2 teaspoon ginger (optional)
  • 1/2 teaspoon cinnamon (optional)

Preparation:

In a saucepan or small pot, cream together the peanut butter and tahini until smooth. Add maple syrup and simmer, stirring frequently. Turn off stove and add the remaining ingredients.

Spread in greased baking pan and chill until firm. Once they are firm, cut into squares and enjoy!

I made these with Kashi Honey Almond Flax cereal, and added the optional cinnamon. I didnt have quick cooking oats, so I just used regular rolled oats. They are absolutely delicious! A cheaper, MUCH healthier alternative to most breakfast/cereal bars found in stores. Yes, the tahini is an expensive ingredient, but a batch of these (which makes a ton of bars, even if you cut them generously) is still cheaper than paying 5 or so bucks for a store-bought box. And one can of tahini will last for several batches of this stuff. So it's worth it. An added plus is that you can customize these with your own choice of cereal, etc. As a vegan, I love finding recipes that are healthier - and many times, yummier - than their non-vegan alternatives. I cant get enough of these bars; I will definitely be making these again! NOTE: Recipe yields more than what you see in my picture. Picture was taken a couple days after I made them, and I had already eaten 4 bars. :)
