A traditional Waldorf salad recipe, but made with rice, so it's a rice salad with the usual Waldorf ingredients, including apples, raisins and walnuts. This simple rice salad recipe is vegetarian, vegan, and gluten-free.Vegan Waldorf rice salad recipe courtesy of Fantastic Foods.
Ingredients:
- 3 cups cooked Basmati rice, cold
- 1 cup water
- 1 cup raisins
- 1/2 cup chopped walnuts
- 2 stalks celery, chopped
- 1 apple, chopped
Preparation:
Place water, raisins and walnuts in a large pot and simmer for 10 minutes. Remove from heat.
Add celery, apples then rice. Mix well and allow to stand for at least 10 more minutes. Serve your rice Waldorf salad chilled and season with a dash of salt, if you like things a bit salty.
