Vegan Waldorf Rice Salad Recipe

Vegan Waldorf Rice Salad Recipe courtesy of Fantastic Foods.

Ingredients:

  • 3 cups cooked Basmati rice, cold
  • 1 cup water
  • 1 cup raisins
  • 1/2 cup chopped walnuts
  • 2 stalks celery, chopped
  • 1 apple, chopped

Preparation:

Place water, raisins and walnuts in a large pot and simmer for 10 minutes. Remove from heat.

Add celery, apples then rice. Mix well and allow to stand for 10 more minutes. Serve chilled.
