Vegetarian Spanish Paella Recipe
A vegetarian and vegan Spanish paella so full of flavor, you won't miss the meat - I promise! This meatless rice paella dish is prepared from lots of healthy veggies and artichoke hearts, and generously spiced with paprika and turmeric.

  • 1 cup white rice
  • 2 cups boiling water
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 tomato, diced
  • 2 cups vegetable broth
  • 1 tsp salt
  • 1 tbsp paprika
  • 1 tsp turmeric
  • 1 cup peas
  • 1 cup artichoke hearts, drained and quartered


Mix the rice and boiling water and let stand for 20 minutes, then pour off the water.

In the meantime, heat the oil in a large frying pan over medium heat and sautee the onion and garlic until the onion is transparent, about 5 minutes. Add the peppers and tomato and continue to sautee over medium heat for three minutes.

Add the rice and broth. Bring to a boil, then reduce the heat to a simmer. Add the salt, paprika and turmeric. Cover and simmer until the rice is tender, about 20 minutes.

Add the peas and artichoke hearts and cook about one minute longer.

the ""rectifier"" below is right. i am sorry to say, there is no need to be polite when debunking an injustice. this recipie has serious flaws and frankly paella is made like risotto in many ways, the long way, no little packet to open and pour in hot water. if you want it done right, you start with the rice in oil, move to the wine and saffron and a touch of salt and ten start the broth. if your're adding onions, they need to be done before the rice, thinly diced and sauteed until transparent... so, with some work a delicious paella can be made vegan. for the broth, you can buy vegan cubes or simmer olive oil, and herbes de provence with ground up carrots and mixed squashes. you need to make 3-4 liters up for a good batch. serve with a glass of cava.
