Ingredients:
- 1 cup white rice
- 2 cups boiling water
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 tomato, diced
- 2 cups vegetable broth
- 1 tsp salt
- 1 tbsp paprika
- 1 tsp turmeric
- 1 cup peas
- 1 cup artichoke hearts, drained and quartered
Preparation:
Mix the rice and boiling water and let stand for 20 minutes, then pour off the water.In the meantime, heat the oil in a large frying pan over medium heat and sautee the onion and garlic until the onion is transparent, about 5 minutes. Add the peppers and tomato and continue to sautee over medium heat for three minutes.
Add the rice and broth. Bring to a boil, then reduce the heat to a simmer. Add the salt, paprika and turmeric. Cover and simmer until the rice is tender, about 20 minutes.
Add the peas and artichoke hearts and cook about one minute longer.
