Vegan Louisiana Gumbo Recipe
Gumbo calls Louisiana home, but you can make a vegetarian and vegan vegetable gumbo at your home and bring a bit of the old south into your kitchen. This vegetarian gumbo recipe with vegetables has the traditional celery, onions, and bell peppers as well as tomatoes and okra, making this a Creole style vegetarian gumbo, rather than Cajun. This Louisiana vegetable gumbo recipe is also vegan.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 stalks celery, sliced
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 3 cups water
  • 1 14 ounce can died tomatoes
  • 1 1/2 cups okra, sliced
  • 1 zucchini, sliced
  • 1 tsp thyme
  • 1 tsp file powder
  • 1/2 tsp salt
  • dash black pepper, to taste
  • dash tabasco sauce, to taste
  • 3 cups rice, pre-cooked

Preparation:

Sautee the onion, bell pepper, celery and garlic in olive oil over medium heat in a large saucepan or soup pot. Allow to cool for about 5 minutes.

Add the remaining ingredients, except rice and bring to a low simmer. Cover partially, and cook for 30 minutes, stirring occasionally. Serve generous portions of the gumbo over a bit of rice.

Pretty good, BUT..., Guest catbot79

I'm pretty picky, I suppose. I like this recipe aside from its lack of roux... the other ingredients are spot-on, so I will be re-making it this weekend with a roux as the base. To me it doesn't really taste like gumbo without the roux, and the roux is not as difficult to make as you might think. It does, however, add time to the process. This recipe is good for a quicker, lighter stew with some of the flavors of gumbo, but it's not for purists. :)
