Vegetarian Ramen "Goulash" Recipe

This "goulash" or "kitchen sink" ramen noodle recipe can easily be modified to whatever ingredients you happen to have on hand. Just toss together some ramen noodles vegetables, tofu and soy sauce for a cheap and filling meal suitable for vegetarians and vegans on a budget. Just be sure to use a vegetarian ramen noodle flavor when making this ramen goulash recipe.

Ingredients:

  • 1 1/4 cups water
  • 1/2 cup frozen or canned vegetables, any kind
  • 1 package vegetarian ramen noodles
  • 1/2 block tofu, cubed (optional)
  • 1 tsp soy sauce

Preparation:

Bring water to a simmer and add veggies and ramen. Add seasoning packet and cook for 2 to 3 minutes, or until ramen is soft.

Add tofu and drain excess water if desired.

Add soy sauce and stir well.
