Vegetarian Pasta E Fagioli

Vegetarian Pasta E Fagioli, or Italian pasta with beans, is a great high-protein pasta recipe for vegetarians (or Italians!). This pasta fagioli recipe is made with great northern beans for plenty of healthy fiber and protein. To make your pasta fagioli even higher in protein, use a whole wheat pasta.

Ingredients:

  • 1 tsp salt + 1/2 tsp
  • 1 1/2 cups small shell or bow tie pasta
  • 4 cups water
  • 2 cans great northern beans
  • 3 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tsp fresh basil, chopped
  • 1 tsp dried oregano
  • 1/2 tsp pepper
  • 1 1/2 tbsp paprika
  • 1 cup tomato sauce

Preparation:

Cook the pasta in the water with 1 teaspoon of salt. Drain almost all the water, then add the beans. Cover.

In a separate skillet, sautee the onions, garlic, basil, oregano and salt and pepper for 3 to 5 minutes, until the onions are soft.

Add the onions and spices to the beans and pasta.

Over low heat, add the paprika and tomato sauce and stir until well blended and heated through.
