Ingredients:
- 1 1/2 cups couscous
- 2 1/4 cups vegetable broth
- 1 cup peas
- 5 green onions (scallions), chopped
- 1/2 cup carrots, sliced thin
- 1 cup raisins
- 1/3 cup orange juice + 1/3 cup
- 1 red or yellow bell pepper, chopped
- 3/4 cup pine nuts or almonds (optional)
- 1/3 cup red wine vinegar
- 1/4 tsp turmeric
- 1 tsp curry
- 1 tsp Dijon mustard
Preparation:
Combine couscous with vegetable broth and bring to a boil. Cover and remove from heat. Set aside and allow to steam until thoroughly cooked, stirring to fluff.Place raisins in 1/3 cup orange juice and allow to absorb the moisture for at least 15 minutes. Combine carrots, peas, green onions and raisins with couscous.
Whisk or blend together the 1/3 cup orange juice, red wine vinegar, turmeric, curry and Dijon. Pour over couscous and veggies and stir well to combine.
