Orange Raisin Couscous Salad

Ingredients:

  • 1 1/2 cups couscous
  • 2 1/4 cups vegetable broth
  • 1 cup peas
  • 5 green onions (scallions), chopped
  • 1/2 cup carrots, sliced thin
  • 1 cup raisins
  • 1/3 cup orange juice + 1/3 cup
  • 1 red or yellow bell pepper, chopped
  • 3/4 cup pine nuts or almonds (optional)
  • 1/3 cup red wine vinegar
  • 1/4 tsp turmeric
  • 1 tsp curry
  • 1 tsp Dijon mustard

Preparation:

Combine couscous with vegetable broth and bring to a boil. Cover and remove from heat. Set aside and allow to steam until thoroughly cooked, stirring to fluff.

Place raisins in 1/3 cup orange juice and allow to absorb the moisture for at least 15 minutes. Combine carrots, peas, green onions and raisins with couscous.

Whisk or blend together the 1/3 cup orange juice, red wine vinegar, turmeric, curry and Dijon. Pour over couscous and veggies and stir well to combine.
