Vegetarian Mushroom Fajitas Recipe

Make vegetarian fajitas using mushrooms and bell peppers for plenty of healthy and nutritious flavor. You could also make this vegetarian fajitas recipe vegan by omitting the sour cream or by using a vegan non-dairy sour cream substitute. Scroll down for more vegetarian fajitas recipes.

Ingredients:

  • 2 red bell peppers, cut into strips
  • 1 1/2 cups sliced fresh mushrooms
  • 1 onion, sliced
  • 1 tbsp olive oil
  • 1/2 tsp curry powder
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 4 flour tortillas
  • sour cream (optional)

Preparation:

Sautee the peppers, mushrooms and onion in olive oil for 3 to 5 minutes. Add the spices and continue cooking for another 2 minutes, or until veggies are tender.

Place a few spoonfuls of the mixture in a flour tortilla, top with sour cream if desired and enjoy your vegetarian fajitas!

Makes 4 mushroom fajitas.
