Vegetarian Moroccan Couscous Recipe

Vegetarian Moroccan Couscous Recipe

Ingredients:

  • 2 1/2 cups couscous, cooked
  • 2 tbsp olive oil
  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 carrots, sliced thin
  • 1 turnip, sliced thin
  • 1 zucchni, sliced thin
  • 1 sweet potato, chopped
  • 1 can chickpeas (garbanzo beans)
  • 1 tbsp tomato paste
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • pinch cumin
  • handful of raisins
  • handful of pine nuts or almonds

Preparation:

Sautee onion, carrots, sweet potato, zucchini, and turnips in olive oil for 8 to 10 minutes. Reduce heat to medium and add vegetable broth.

Allow to simmer, then add spices, tomato paste, and garbanzo beans.

Stir in prepared couscous, raisins and nuts.
