Vegetarian "Hamburger" Casserole

Use veggie burgers to make a vegetarian "hamburger" and macaroni casserole. This is an easy vegetarian macaroni casserole with lots of cheese. For a bit of added nutrition, you could add some diced steamed veggies, such as broccoli or bell peppers. This veggie burger casserole recipe will be a hit with the kids, or, you can add a dash of Tabasco sauce, hot sauce or crushed red pepper flakes to give it more of a kick for adults.

Ingredients:

  • 16 ounces macaroni pasta
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 4 veggie burgers, thawed then diced or crumbled
  • 1 large 28 ounce can diced tomatoes (don't drain)
  • 1 10 ounce can cheese soup
  • 1/3 tsp salt
  • 1 cup grated cheese, any kind

Preparation:

Cook pasta according to package directions.

Pre-heat oven to 375 degrees.

Sautee onion and garlic in olive oil for a few minutes, then add veggie burger crumbles, and sautee another minute or two, stirring frequently.

In a large casserole dish, combine the cooked pasta, the veggie burgers with garlic and onions. Add the diced tomatoes, cheese and salt, tossing gently just until ingredients are well combined.

Sprinkle the top of the casserole with grated cheese, then bake for 25 to 30 minutes, or until sauce is bubbly and cheese is melted. Allow to cool slightly before serving.
