Vegetarian Lima Bean and Cheese Casserole

Vegetarian Lima Bean and Cheese Casserole. This is a simple recipe great for vegetarian kids - they'll love the cheese and crunchy crackers. Quick and easy to prepare, you can get this vegetarian bean casserole into the oven in less than ten minutes. Recipe courtesy of Bush's® Beans.

Ingredients:

  • 2/3 cup onion, finely chopped
  • 1 teaspoon vegetable oil
  • 1 16 ounce can lima beans
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 tsp pepper
  • 1 cup cheese crackers, crushed

Preparation:

In a skillet, cook onion in oil until tender. Drain beans, reserving 1/2 cup liquid.

In a lightly-greased 1 1/2-quart casserole dish, combine beans, reserved liquid, 1/2 cup cheese, onion, mayonnaise and pepper. Spread remaining cheese over bean mixture; top with cracker crumbs.

Bake at 350 degrees for 25 to 30 minutes or until bubbly.
