Ingredients:
- 2/3 cup onion, finely chopped
- 1 teaspoon vegetable oil
- 1 16 ounce can lima beans
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 tsp pepper
- 1 cup cheese crackers, crushed
Preparation:
In a skillet, cook onion in oil until tender. Drain beans, reserving 1/2 cup liquid.In a lightly-greased 1 1/2-quart casserole dish, combine beans, reserved liquid, 1/2 cup cheese, onion, mayonnaise and pepper. Spread remaining cheese over bean mixture; top with cracker crumbs.
Bake at 350 degrees for 25 to 30 minutes or until bubbly.
