Vegan Lentil Shepherd's Pie Recipe

Ingredients:

  • 1/2 pound lentils, cooked and drained
  • 1 onion, diced
  • 1/2 tsp crumbled fresh sage
  • 1/2 tsp minced garlic
  • pinch of dried oregano
  • 1 tsp salt
  • dash cayenne pepper
  • 3 large potatoes, cooked
  • 1/2 to 1 cup of hot soy milk
  • margarine to taste

Preparation:

Pre-heat the oven to 400 degrees.

In a large mixing bowl, mash the cooked lentils thoroughly and add the onion and seasonings. Put the lentil mixture in a lightly oiled casserole dish.

In a separate bowl, mash the potatoes and add the hot soy milk, margarine and salt. Beat by hand or with an electric mixer until fluffy.

Spread the mashed potatoes on top of the mashed lentils and bake for 20 minutes or until the potatoes are dry on top.

Place the pie under the broiler to brown on top. Serve warm.

TASTES AWESOME & CHEAP TO MAKE, Guest hope

I loved the recipe as is. I figured I'd share the things I did differently though in case anyone else wants to amp it up a bit. I only used half of an onion and personally felt it was more than enough. I forgot to add garlic so I would say that's optional if you don't have it on hand. After I spread the lentil mixture in the casserole dish, I mixed in a can of corn, and a can of peas. Didn't change the potato mixture. (Used almond milk by the way, and earth balance when it came to the butter.) Added fresh rosemary on top for the fun of it. Yum. I'm definitely making this again and highly recommend it.
