Vegetarian Lentil Rice Loaf. A healthy high-fiber vegetarian lentil loaf recipe makes a great alternative to meat loaf. Serve this lentil and rice recipe as an entree at your vegetarian Thanksgiving or Christmas dinner. Scroll down for more lentil loaf and vegetarian loaf recipes to try.

Ingredients:

  • 1 1/2 cups lentils
  • 1 1/2 cups millet
  • 1 1/2 cups brown rice
  • 9 cups water
  • 1 cup bread crumbs
  • 1/2 cup rolled oats
  • 1/2 cup cashews, finely chopped
  • 1/4 cup vegetable oil
  • 3 tbsp onion powder
  • 1/12 tablespoons crumbled fresh sage
  • 1/2 tsp celery seed
  • salt to taste

Preparation:

Combine lentils, millet, rice and water in a sauce pan. Bring to a boil, lower the heat, and simmer until cooked, about one hour.

Pre-heat the oven to 350 degrees. Lightly oil two 8 1/2 x 4 1/2 loaf pans.

Add the remaining loaf ingredients and mix well. Transfer mixture to loaf pans and bake for one hour, or until lightly brown and the top is dry to the touch.

Good first try with extra spices, Guest NaturallyLit

I just made this today for the first time. Based on other reviews, I added more flavor - see below. My husband who ""hates"" meatloaf and veg loaves, liked this and said he would be happy to eat it again. I absolutely loved it. Here is what I added: ... First, I cut the whole recipe in half, so as just to make one loaf. So, my measurements here are for a half batch. I left out the sage because I dont usually like sage. ... To the cooking lentils, millet, rice mixture I added - while they were cooking - 2 unsalted veg bullion cubes, 1/2 finely chopped onion, 1 clove minced garlic, 2 Tbsp minced fresh rosemary, 2 bay leaves, and 1 tsp cumin. (remove the bay leaves just before you mix it with the bread crumb mixture) ... To the bread crumb mixture I added a generous dash of salt and pepper, 2 Tbsp minced fresh basil, 3 Tbsp minced fresh parsley, and a finely minced celery stalk with the celery leaves. ... You dont need to add all this, but the point is that this takes well to a lot of herbs, to make it more flavorful. It was delicious this way!
