Ingredients:
- 2 tbsp teriyaki sauce
- 2 tbsp soy sauce
- 2 tbsp wine vinegar
- 2 tbsp ground ginger
- 2 stalks celery, diced
- 1 carrot, diced
- 2/3 cup snow peas
- 1/2 onion, diced
- 4 scallions, sliced
- 3 tbsp olive oil
- 1 tbsp sesame oil
- 1 pound lo mein or Chinese style noodles
Preparation:
Cook the lo mein noodles until soft, about 6 to 8 minutes, then drain well.
In a large skillet or wok, sautee the vegetables in 2 tbsp of the olive oil for 3 to 5 minutes, or just until tender.
Add remaining oil and the teriyaki and soy sauce mixture to the skillet, then add the lo mein noodles. Allow to cook for another 5 to 7 minutes, stirring frequently and adding more moisture if needed.
