Vegetarian Pesto and Feta Pizza

This vegetarian pesto pizza recipe uses pesto instead of tomato sauce, and is topped with feta, artichokes and kalamata olives for a Mediterranean and Greek inspired fusion vegetarian pizza! Vegetarian pesto pizza recipe courtesy the Wheat Foods Council.

Ingredients:

  • 1 15 - inch pre-made pizza crust
  • 1/2 cup vegetarian pesto sauce
  • 6 ounce feta cheese, crumbled
  • 1 6 ounce jar artichokes, drained and chopped
  • 1/3 cup hydrated sun-dried tomatoes, sliced
  • 1/2 cup chopped kalamata olives

Preparation:

Pre-heat oven to 400 degrees.

Spread pesto sauce over crust. Sprinkle on feta cheese. Add artichokes, sun-dried tomatoes and olives. Bake for 15 minutes or until heated through.

Makes 10 slices of vegetarian pizza. Calories/Serving: 260

Nutrition: Each slice provides approximately: 260 calories, 10 g protein, 29 g carbohydrates, 3 g fiber, 13 g fat (5 g saturated), 19 mg cholesterol, 80 mcg folate, 3 mg iron, 608 mg sodium.
