Spinach and Couscous with Feta Cheese

Spinach, couscous and feta cheese combine for a Mediterranean-inspired vegetarian meal. Some tomatoes or perhaps even artichoke hearts might also go well in this couscous recipe. One user who gave this recipe five out of five stars also suggested adding pine nuts. Sounds good to me! Spinach and Couscous with Feta Cheese recipe courtesy of Fantastic Foods.

Ingredients:

  • 1 12 ounce box couscous (about 1 1/2 cups)
  • 2 1/4 cups vegetable broth
  • 1 onion, chopped
  • 1/2 pound mushrooms, sliced
  • 1/2 tsp garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp oregano
  • 1 bunch fresh spinach
  • 1/2 cup crumbled feta cheese

Preparation:

In a saucepan, combine the couscous and broth and cook as directed.

In a separate skillet, sautee the onion, mushrooms and garlic until tender. Stir in the lemon juice and oregano. Add spinach, cooking only until wilted.

Toss the cooked couscous with the spinach mixture, and sprinkle with feta cheese.

Bland and somewhat dry; lacked seasoning. Not a huge fan.
