Vegetarian Cucumber and Hummus Sandwich Recipe

In his recent book Prevent and Reverse Heart Disease, Dr. Caldwell B. Esselstyn shares this healthy and high-fiber recipe for a vegetarian and vegan hummus and cucumber sandwich. Dr. Esselstyn recommends using a no-tahini hummus in this recipe.

Ingredients:

  • whole grain bread
  • no-tahini hummus
  • cucumber slices
  • chopped fresh parsley or cilantro
  • roasted red peppers

Preparation:

Toast whole-grain bread and spread with lots of no-tahini hummus.

Cover no-tahini hummus with a layer of peeled cucumber slices, slightly overlapping.

Sprinkle chopped parsley or cilantro over sliced cucumbers. Top with roasted red peppers.

Dr. Esselstyn says, "This is a little messy to eat, but worth the drips! Roasted red pepper all by itself is also good."
