Couscous Stuffed Bell Peppers

A simple couscous salad recipe with green onions and fresh parsley is stuffed into fresh whole bell peppers. If you need a stuffed bell pepper recipe to use as an entree for a vegetarian or vegan meal, this is a simple and highly-rated one to try.

Ingredients:

  • 1/2 cup couscous, uncooked
  • 1 cup water
  • 6 green bell peppers, whole
  • 2 red or yellow bell peppers, diced
  • 4-6 green onions (scallions), sliced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped
  • salt and pepper to taste

Preparation:

Bring the water to a boil in a saucepan and add the couscous. Cover, and let sit for at least 20 minutes, or until couscous becomes fluffy when stirred with a fork. Allow couscous to cool.

Slice the stems and tops off of the whole green bell peppers and remove the cores and seeds.

In a large bowl, combine the diced bell peppers, couscous and green onions.

In a separate small bowl, whisk together the lemon juice, olive oil and parsley. Pour this dressing over the couscous and gently toss to combine.

Spoon couscous into each whole green bell pepper, and sprinkle a dash of salt and pepper on top.

Is this recipe missing an ingredient?, Guest JanH

The instructions call for adding zucchini with couscous and other ingredients, but I don't see zukes mentioned in the list. How much zucchini and is it sauteed or steamed before adding to the filling mixture?
