Vegetarian "Chicken" and Sweet Potato Tzimmes Recipe

This meatless vegetarian tzimmes or tsimmes recipe uses vegetarian mock chicken as well as sweet potatoes for a vegetarian Rosh Hashanah, Hannukah, or anytime side dish. Ingredients:

  • 1 vegetarian Chicken Free Chicken, cubed
  • 2 cups canned sweet potatoes
  • 1 small red or green pepper, sliced
  • 1 red Spanish onion, cut into 1 inch cubes
  • 1 carrot, sliced
  • 1 stalk celery, sliced
  • 1 orange, sliced
  • 1 lemon, sliced
  • 1 cup dried fruit, chopped
  • 1 clove garlic, minced
  • 1 cup wine or apple juice
  • 2 tbsp olive or canola oil
  • 1 tbsp Braggs Liquid Aminos or soy sauce
  • 1 tbsp lemon juice
  • 1 tbsp basil

Preparation:

Add all ingredients including Chicken Free Chicken into a pot. Bring to a boil. Reduce to simmer. Cover tightly. Cook 40 minutes.
