Vegetarian "Chicken" Masala Curry

If you've recently gone vegetarian, you might be longing for some of your favorite foods. Curried chicken masala has long been a favorite for many people, particularly in England. Love chicken masala? Try it with a chicken substitute, to make it completely vegetarian!

Ingredients

  • 10 to 15 ounces vegetarian chicken substitute, cut into 2-inch cubes

  • 1 onion, diced

  • 1 teaspoon crushed garlic

  • 1 teaspoon crushed ginger

  • 1 to 2 tablespoons chicken masala spice

  • 1/2 cup finely chopped tomato

  • 1 teaspoon chopped cilantro

  • 1 tablespoon olive oil

  • 1 cup water

Steps to Make It

  1. Gather the ingredients.

  2. Saute onions, garlic, and ginger in oil until lightly browned.

  3. Add Masala spice and saute 2 more minutes.

  4. Add tomatoes and cook another 10 minutes.

  5. Add Chicken Free Chicken and cook an additional 5 minutes adding water as necessary.​

  6. Serve over rice.

  7. Enjoy!
