Ingredients:
- 1 15 ounce can black beans, rinsed and drained
- 1/4 cup chopped chives or green onions
- 1/2 cup cooked brown rice
- 1/3 cup fat free Italian salad dressing
- 1/2 cup low fat feta or goat cheese, crumbled
- 12 large leaves Boston lettuce
Preparation:
Set beans and chives in separate shallow bowls.Combine rice, salad dressing and cheese in small bowl. Scoop into third shallow bowl.
Lay lettuce leaves flat on plate and spoon rice mixture, beans and chives on each.
