Ginger Almond Rice Noodles with Pineapple

Fiery chiles. Sensual almond butter. Sweet pineapple. A little bit of sugar and a little bit of salt. This vegetarian and vegan rice noodle dish has it all.

Ingredients:

  • 1 12 ounce package rice noodles
  • 1/3 cup almond butter
  • 1 tsp fresh minced ginger
  • 1/2 cup orange juice
  • 2 tbsp soy sauce
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1 small chile, minced
  • 1/2 cup pineapple dices
  • 2 tbsp canola or safflower oil

Preparation:

Cook rice noodles according to package instructions.

In a small bowl, whisk together the almond butter, ginger, orange juice, soy sauce, salt, sugar and minced chile until well combined.

In a large skillet, fry pineapple in oil until lightly cooked, about two minutes, then add cooked rice noodles, stirring to coat in oil and prevent burning.

Reduced heat and add almond butter mixture, heating until liquid is incorporated and well mixed.
