Sweet Cabbage Vegetable Stir Fry

Pineapple and Vegetable Stir Fry

Pineapple makes a great addition to just about any stir fry and needs very little cooking time. This vegetable stir fry is sweet, crunchy and a breeze to make. It doesn't have a hearty sauce, so I like to eat it as is, rather than over rice.

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

  • 2 cloves garlic, crushed
  • 1 red onion, chopped
  • 2 tbsp balsamic or red wine vinegar
  • 3 tbsp olive oil
  • 1/3 head green cabbage
  • 1 can pineapple chunks, drained
  • approx. 2 cups fresh broccoli
  • 1/4 tsp salt
  • 3/4 tsp garlic powder
  • water, if needed

Preparation:

In wok or large skillet, sautee onions and garlic in olive oil until onions are soft, about 3-5 minutes. Add broccoli and balsamic, cover for 3 more minutes, stirring occasionally.

Add rest of ingredients and stir fry about 3 more minutes, adding a bit of water to retain moisture if stir fry becomes too dry. Cabbage should still be softened but still slightly crisp when finished. Serve immediately and enjoy!

Followed the recipe exactly as written, used Balsamic Vinegar. It was SO easy and the combination of flavors and textures was DELISH. Eating leftovers as I type this! YUM.
