This vegetarian pizza sandwich is a toasted sandwich that tastes just like pizza, so kids will love it! You can sneak some diced vegetables into the sandwich if you want to add some extra nutrition. Yum! It tastes like pizza! For a vegan version, use a vegan mock pepperoni brand, and use a vegan and casein-free soy cheese.

- 2 slices bread
- 2 tbsp pizza sauce or marinara sauce
- small handful of cheese
- 5-6 slices of vegetarian "pepperoni"
Spread the pizza sauce on the bread and top with cheese and vegetarian pepperoni slices. Assemble sandwich, and heat for just a few minutes in a toaster oven or sandwich maker, until bread is lightly toasted and cheese is melty.
If you don't have a toaster oven or a sandwich maker, toast the bread first, then re-heat the entire sandwich in the microwave.
