Cheeseless Vegan Pesto with Fresh Herbs

A cheeseless Italian vegan pesto recipe using fresh herbs including fresh basil, as in traditional pesto recipes, but also adding fresh cilantro and a bit of mint for a myriad of flavors. You certainly won't miss the cheese in this flavorful vegan pesto recipe!

Ingredients:

  • 1 cup pinenuts
  • 1/2 cup good quality olive oil
  • 4-5 cloves garlic
  • 3 tbsp miso
  • 2 tbsp lemon juice
  • 1 bunch fresh basil
  • 1 bunch fresh cilantro
  • 8-10 fresh mint leaves

Preparation:

Process all ingredients together in a food processor until desired consistency is reached. Pesto should be slightly coarse but well mixed. You can also make this vegan pesto in a blender if you don't have a food processor.
