A cheeseless dairy-free Italian vegan pesto recipe using fresh herbs including fresh basil, as in traditional pesto recipes, but also adding fresh cilantro and a bit of mint for a myriad of flavors. If you've got fresh herbs growing in your home herb garden, this is a great way to use up plenty of them. You certainly won't miss the cheese in this flavorful vegan pesto recipe!
- 1 cup pine nuts
- 1/2 cup good quality olive oil
- 4-5 cloves garlic
- 3 tbsp miso
- 2 tbsp lemon juice
- 1 bunch fresh basil
- 1 bunch fresh cilantro
- 8-10 fresh mint leaves
Process all ingredients together in a food processor until desired consistency is reached. Pesto should be slightly coarse but well mixed. You can also make this vegan pesto in a blender if you don't have a food processor. Enjoy your basil, cilantro and mint pesto!
