Rip's Oil-free Tahini-free Low Fat Hummus Recipe

The Engine 2 Diet, by Rip Esselstyn

Make a low-fat and reduced-fat hummus without oil. Rip Esselstyn, author of The Engine 2 Diet says, "This is the most basic of the spreads. You can find a variation of this recipe in almost any grocery store, but 95 percent of them are made with either olive oil or tahini (sesame paste), which pushes up the fat content. Your best bet is to take three minutes and make a batch on Sunday that will last you for the week."

Good for the health conscious, Guest Gary

Coming from a person who eats healthy... but usually not THIS healthy, it's good. Add the fat and it would probably be Excellent...lol. But, that's life. I will definitely make hummus again. I usually buy it at the store and wanted to try making my own. I used a vegetable broth and the liquid aminos. The garlic... go easy on it. 2 cloves may be too much. I like garlic, but the 2 cloves I used seemed to have a bit too much ""Bite"" in them. I also found that the more lemon juice I added... the closer I got to my usual store bought flavor I was accustomed to. About liquid aminos... what an awesome alternative to soy sauce... which is known to be not so good for you. It tastes just like soy sauce and has awesome health benefits. Enjoy!
