Eggless Gluten-free Pancakes with Brown Rice Flour

Eggless Gluten-free Pancakes with Brown Rice Flour. Recipe courtesy of Ener-G Foods.

Ingredients:

  • 1 tsp Ener-G egg replacer
  • 1 cup buttermilk
  • 1 tsp baking soda
  • 1 tbsp orange juice concentrate
  • 1 tsp baking powder
  • 1/4 cup buttermilk
  • 1 1/2 cups brown rice flour
  • 2 tbsp oil

Preparation:

Whip the egg replacer, buttermilk, baking soda, orange juice and baking powder together. Mix in oil and brown rice flour. Stir until well blended; batter should be smooth.

Fry pancakes in oil. If batter is too wet add a little more brown rice flour.
