Gluten-Free Bell Pepper Rings

Ingredients:

  • 3 large green bell peppers
  • 1/2 cup rice flour
  • 1/2 cup Ener-G Potato Mix
  • 1/2 tsp garlic powder
  • 1 1/2 cups milk
  • oil for frying

Preparation:

Slice peppers crossways forming rings. Remove any seeds.

Mix remaining ingredients to form a soft dough. Coat bell pepper rings with this dough.

Fry the rings in hot oil (325 degrees) until light brown. Serve warm.
