Ingredients:
- 2 eggs (or 2 tbsp soft tofu)
- 2 ounces cream cheese
- 2 tbsp butter or margarine
- 4 tbsp molasses
- 1 1/2 tsp vanilla
- 3/4 cup soy flour
- 1/2 cup Ener-G white rice flour
- 1 1/2 tsp ginger
- 1 tbsp sugar
- 2 tsp xanthan gum
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp cloves
Preparation:
Cream together egg (or tofu), cream cheese, butter or margarine, molasses, and vanilla. Mix in remaining ingredients until well blended (about 1 minute) when the sides of the bowl start to come clean.Preheat oven to 325 degrees.
Place dough on cutting board or flat surface. Roll out dough to 1/4 inch thickness. Cut dough in desired shapes. Place cutouts on greased cookie sheet about 1/2 inch apart.
Bake at 325 degrees for about 16 minutes.
