Gluten-Free Pie Crust Recipe
Make a homemade gluten-free pie crust using just three simple ingredients. Need a gluten-free pie recipe to go along with your homemade crust? Try this gluten-free vegan pumpkin pie. Ingredients:

  • 1/2 cup shortening
  • 1 1/2 cups rice flour
  • 4 tbsp cold water

Preparation:

Preheat oven to 400 degrees.

Cut shortening into rice flour until a crumb like texture forms. Add water. Work dough with hands until soft and form into ball.

Place dough in 8 inch pie pan and press it into the bottom and sides, use the back of a spoon or fingers.

Use fork to prick the bottom of the crust to prevent buckling. Place crust in oven and bake for 12 to 15 minutes, or until edges are golden brown.

This crust worked out very well for me. It did take some time to make because, like another reviewer, I had to piece it together. But it was worth it. I think it also helped that I added the water gradually and ended up using 2tbsp water, instead of 4, which I think would have helped the reviewer that had a mush instead of a crust. With any pie crust you must know that you cannot put too much liquid in it before it bakes, because like the quiche making reviewer you end up a mushy uncooked center. I have done this before with other pies I've made and it is so frustrating, but it is not the crust that is the problem, it is the filling. When making this crust, I did not precook the crust, although that is a good idea if you have a wet filling and nothing to soak up the liquid. Instead, I put tapioca flour into my blueberry filling to soak up the liquid that come out of the berries. As for the person that had a dirt tasting crust, I have no idea what that is about.
