Ingredients:
- 1/2 cup shortening
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg, slightly beaten
- 1/3 cup rice flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
Preparation:
Cream shortening, peanut butter, granulated and brown sugars together until light and fluffy. Add the egg and stir until well mixed.
Measure and sift dry ingredients together and stir into creamed mixture. Mix thoroughly.
Form into small balls about size of walnuts and place on lightly greased cookie sheet. Flatten with tines of fork dipped in sugar.
Bake for 10-12 minutes or until lightly browned. Allow to cool before removing from the cookie sheet.
