Ingredients:

  • 1/2 cup shortening
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg, slightly beaten
  • 1/3 cup rice flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Preparation:

Preheat oven to 375 degrees F.

Cream shortening, peanut butter, granulated and brown sugars together until light and fluffy. Add the egg and stir until well mixed.

Measure and sift dry ingredients together and stir into creamed mixture. Mix thoroughly.

Form into small balls about size of walnuts and place on lightly greased cookie sheet. Flatten with tines of fork dipped in sugar.

Bake for 10-12 minutes or until lightly browned. Allow to cool before removing from the cookie sheet.

This peanut butter cookie recipe is gltuen-free and wheat-free.

I mixed up this batter and it was so moist it was impossible to form balls out of it, but I just went with it for my first pan and slopped some dough on there. I then baked it for the recommended time and when I returned to the kitchen after the timer went off I found that my cookies were burnt. So, I tweaked the cookie dough. I added another 1/3 cup plus a few tablespoons of the rice flour. I also decreased the time to about 6-8 minutes. After I did that, the cookies Turned out very good and tasty. They are not chewy tho, more crumbley.
