Gluten-Free Coconut Cookie Bars

Gluten-Free Coconut Cookie Bars using rice flour and sour cream. These gluten-free coconut cookies with pecans would make a nice gluten-free Christmas treat.

Ingredients:

  • 1 cup brown sugar
  • 1 cup rice flour
  • 1/4 cup butter or margarine
  • 1 egg, beaten
  • 1 tsp nutmeg
  • 1 cup sour cream
  • 1tsp baking soda
  • 1 cup coconut
  • 1/2 cup pecans, chopped, or other nut

Preparation:

Sift sugar with rice flour. Cut in butter until crumbly. Stir in egg, nutmeg and sour cream mixed with soda. Mix well.

Fold in coconut and pecans. Pour into a well-buttered 9-inch pan.[]p Bake at 350 degrees F. for 45 minutes or until done. Cut into bars. Serve hot or cold.

This vegetarian cookie recipe is gluten-free and wheat-free.
