Fat-free Wine Poached Peaches in Red Wine Sauce

A fat-free and low-calorie recipe for peaches poached and simmered in a red wine, which becomes a thickened red wine reduction. Easy enough for a novice chef, yet elegant enough to serve to dinner guests. Serve with a low-fat ice cream, or a vegan non-dairy ice cream, perhaps topped with whipped cream and a sprinkle of cinnamon. Perfect for a low-fat, fat-free and low-cal summer dessert.

Ingredients:

  • 4 peaches
  • 1 1/2 cups sugar
  • 1 bottle red wine
  • 1/4 cup strawberry preserves
  • water for boiling

Preparation:

Place whole peaches in a large pot and cover with water. Boil for 2-3 minutes. After they have cooled, slice in half and remove the pit.

Dissolve the sugar in the wine over medium heat in a medium sized saucepan. Bring the wine to a boil and add the peaches. Allow to cook for 30 minutes.

Remove the peaches, and allow the wine to continue cooking until it has reduced to about one cup. Add the preserves and mix well, simmering for a few more minutes.

Chill for at least 4 hours. Serve topped with whipped cream, if desired.

Makes 8 servings of wine-poached peaches. Yum!
