Vegan Cake Mix Cookie Recipe

Cake mix isn't just for cake anymore! Try this vegan cake mix cookie recipe to quickly make some yummy cookies. Just about any cake mix flavor will do, but be sure to read the ingredients on the label if you're vegan. I've made these cookies with lots of different types of cake mixes - lemon, pumpkin, chocolate, and even vanilla - and they turn out fantastic every time. I love them!

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • 1 box cake mix, any flavor
  • 1 cup margarine
  • egg replacer equivalent of 2 eggs (Ener-G works best)
  • 1 1/2 cups chocolate chips (optional)

Preparation:

Mix together all ingredients in a large bowl until well combined.

Refridgerate dough for at least a half hour. This will help it firm up.

Bake 10-12 minutes at 350 degrees. Cookies will be soft and chewy. Yum!

I just made my first batch using vanilla cake mix (Betty croker). i read the reviews first. I cook almost vegan because of my daughters food allergies. I will tell you- this came out perfect. I used regular margarine 1/2 CUP (i slightly melted in microwave to measure accurately)- note this is less than the recipe calls for I did use Ener-G The first batch that went in the oven i did not chill first and they came out absolutely perfect- cant even taste the ener-g because the cake taste is stronger than a typical cookie recipe- the remainder (chilled cookies) I was able to roll them and flatten- they will be easy to decorate with icing. i have a new favorite cookie recipe- i cant wait to go shopping and try a chocolate flavor using this strategy. ?
