Creamy Fat-free Tofu Frosting Recipe

This is a creamy vegan tofu frosting recipe made with tofu as a base and with a reduced amount of sugar to keep it nearly fat-free, since there's no margarine or butter. No cooking needed - just add all the ingredients to a blender and puree! If you're looking for a healthier low-fat or fat-fere vegan frosting recipe with less sugar, this is a good one to try. You can also add a bit of food coloring and flavor extracts to make different colors and flavors. Try a drop of green food coloring with some mint extract, for example. Enjoy!

Ingredients:

  • 1 pound soft (silken) tofu, patted dry
  • 2 tbsp lemon juice
  • 3-4 tablespoons powdered sugar
  • 1/2 tsp vanilla

There is no way that this could be considered a frosting by any stretch of the imagination. I don't know if the measurements in the recipe were off, but I triple checked myself while making it, and it came out watery and tasting 100% like lemon and tofu, even after adding twice the amount of powdered sugar the recipe called for. 3-4 TBS of sugar to an entire pound of tofu is NOT an adequate amount. If a little bit of fat is the price of an edible vegan frosting, then so be it.
